Dining for One - Simple Chicken Breast

So now that you know how to prepare a killer salad, you should probably have something to serve as a main course. Today, you’re going to learn how to prepare a simple yet tasty chicken breast. So let’s get acquainted with what you’re going to need.

Cookware and Dishes:

  • 1 Shallow Baking Dish

That was a lot of stuff, huh?
Ingredients:

  • 1 8-10 oz. Chicken Breast
  • 1/4 cup Light Italian Dressing
  • 1 tsp Basil
  • 1 tsp Oregano
  • 1 tsp Parsley

Gathering the ingredients is the most time-consuming part of this meal, I think.

Directions:

  1. Preheat oven to 400 F
  2. Put chicken breast in baking dish
  3. Cover with Italian dressing
  4. Sprinkle on seasonings (rub in if desired)
  5. Place in oven, bake for 20-22 min or until done

This meal serves 1-2 people, depending on serving size. Looking to add more spice to the chicken? Sprinkle on a 1/2 tsp of dried red pepper seed on top of your other seasonings. That gives the chicken a little more bite. This chicken is best served with 1 cup of brown rice or cut green beans and water or milk.

    This is a quality series.

    Back when I was in school, I routinely cooked meals because it was healthier and easier than battling Atlanta’s traffic. Although I’ve become a Qdoba freak (lunch, dinner, and just about everything else in between), I still remember a few of the meals that I used to make.

    My personal favorite was my “specialty of the house,” ground turkey spaghetti. It consists of

    whole wheat, whole grain, angel hair pasta
    1 cup spaghetti sauce of your choice (I like the ones that are lowest in carbs for this dish)
    1 lb. ground turkey
    Kraft shredded parmesan cheese (the shoots, not the powdery stuff)
    1 tsp red pepper
    1 tsp seasoning salt
    2 tsp worcestershire sauce
    1 tsp garlic powder
    1 tsp basil
    1 tsp oregano

    To start with, you’ll need to boil water in a pot for the pasta noodles. Once that’s cracking, put the ground turkey in a skillet, and add the seasoning salt, worcestershire sauce, and garlic powder to it while it cooks. Be sure to be attentive during the cooking process, as the turkey typically comes in a “brick,” and it will need to be cut apart and seasoned while it cooks. It’s been a long time since I’ve done this, so I’m not sure on the cooking time - just make sure that you get all the pink out.

    Once the pasta has cooked to your satisfaction, drain the noodles and put them on your serving plates. Using that same pot, pour in 1 to 1.5 cups of your preferred spaghetti sauce. Cook it on LOW heat, stirring throughout so as to avoid bubbling (which is hugely messy). Since the pot will already be fairly hot from the pasta, the sauce will only need to be over heat for a maximum of two minutes.

    Once both the turkey and the sauce are cooked, I like to set them on cool areas of the stove and slice up the turkey. Distribute the turkey however you like between your serving plates, and then pour over your hot spaghetti sauce, sprinkling your basil and your oregano for added flavor. Finally, top it off with the shredded parmesan cheese, and you’ve got a healthy, heart-friendly meal that you’ll love!

    Thanks for the comment and recipe Chris. That looks really tasty and I’m excited to try it out.

    The great thing about ground turkey is that it’s so lean. You can cook it and not have to worry about massive amounts of grease and fat getting into your food.

    Also, it looks like the spices that you’ve chosen will bring out the flavor of the meat and give it a little bite without being too overpowering.

    Another tip for chicken is to marinade it in a l oj and a little olive oil, salt and pepper. You can control the heat by adding different kinds of peppers, and it’s really light. If you are cooking for one, you can put marinade and chicken in little freezer baggies (don’t use Ziplock, cause they’re not so good) and you can pull out one at a time. Also, if you can swing it, get a rice cooker. They’re super useful, because they make perfect rice every time. If you get one with a timer, or if you get a timer (like for your house lights), you can get the rice ready at hours before you actually need it to cook. Rice cooker+frozen veggies+George Forman = good dinner! A rice cooker and a slow cooker are really useful.
